Illuminate is crafted in Marlborough with individually harvested blocks that are gently pressed and cold-soaked before fermentation. About 60% of the wine undergoes “spinning cone” distillation to reduce alcohol to nearly 1%, then is blended back to achieve a final alcohol content of 7% ABV, offering a lower-calorie, light wine without sacrificing flavor complexity.
